Winemaking Information

The wine is fermented with natural yeasts and aged in variously sized oak vats. About five percent of the total volume of wine is replaced with wine from the new vintage each year. Older wine is racked to barrel where is it progressively topped up after after new bottlings.  
SO2: No sulfur added to the wine
Fining/Filtration: Unfined/Unfiltered

Fun Facts: In contrast to the estate's other Marsalas, the Vecchio Samperi line is never fortified. The idea is to recreate the ancient, original way of making "vino perpetuo" from solera.
