Winemaking Information
Fermentation takes place with natural yeasts in large wooden casks and the process is started by a pied de cuve made from grapes picked ten days earlier. Maceration lasts for 60 to 70 days and the submerged cap is split. Aged in a neutral oak barrel for approximately five years.
