Winemaking Information
Fermentation with native yeasts is started by a pied de cuve made from grapes picked ten days earlier and takes place in large wooden casks. Maceration lasts for 60 to 70 days and the submerged cap is split. Aged in a neutral oak barrel for approximately five years.
